The new breed of butcher is young, cool, gives classes, has the freshest meats and dig what they are doing. Leading this wave is '4505 Meats' in San Francisco. Their pork sausage, uncured hot dogs (filled w/BACON!), and Chicharrones (basically, Mexican pork candy) are awesome, plus their t-shirts (one design pictured on the left) and posters are just as good. I may have to plan an SF trip. Check them out.
